Persimmon Pudding
1 quart persimmons
1 cup water
1 pint sweet milk
2 eggs
1 1/2 cup sugar
1 pint flour (1/2 plain and 1/2 self-rising)
1/4 lb. butter
Mash persimmons and water together and run through col
andere Makes about 2 cups pulp. Mix sugar, flour, milk and
eggs with persimmon pulp. Chip butter in deep pan . Melt
butter and pour pudding into pan and bake at 375 degrees until
set. Sprinkle 1/2 cup sugar, 1/4 pound butter and cinnamon
on top. Cover with boiling water and bake until dry.

Persimmon Pudding
2 cups strained persimmon pulp
1 egg
4 tbsp. butter or margarine
3/4 cup flour
1/4 tsp. nutmeg or mace
1/2 cup sugar
1/2 cup milk
1/2 tsp. soda
Cream butter, sugar, and egg. Add soda, flour, nutmeg, and
milk. Add persimmon pulp and mix well. Pour into greased
8" square pan and bake at 350 degrees for 25-30 minutes.
