Persimmon Pudding
2 cups persimmon pulp
3 eggs, well beaten
1 1/2 cups milk
2 cups flour
1/2 tsp. soda
1/2 tsp. cinnamon
1 tsp. salt or less
1 1/2 cup sugar
3 tbsp. melted margarine
little vanilla
Blend persimmon pulp and beaten eggs. Add milk. Then slowly
stir in dry ingredients. Stir in margarine. Pour into a greased
and floured pan 2" deep. I use a 9" x 13" pan. Bake 1 hour
at 300 degrees.

1 1/2 cups of milk
2 cups of self-fising flour
2 eggs
1 tsp. vanilla
1/2 tsp. cinnamon
1 stick of margarine or butter
Sift flour, sugar and all dry ingredients together. Mix beaten
eggs, pulp, milk and vanilla together. Add the dry ingredients. (
Blend well. Melt the butter in the pan you are going to bake
in. Pour butter in the mixture and mix well. Bake at 350 degrees.
