Mexican Green Beans
1 lb. green beans (strung and broken in half)
4 slices bacon, cut up
I medium onion, chopped (about 1/2 cup)
I fresh tomato, chopped
1 clove garlic, minced
1/2 tsp, dried oregano leaves
1 tsp. salt
dash pepper
2 tbsp. lemon juice (optional)
Cook beans in water with salt. Bring to a boil. Cook uncovered
5 - 10 minutes. Cover and cook until tender, 15 minutes
or more if needed. Immediately rinse under cold water; drain.
Fry bacon in large skillet. Drain on paper towel. Cook and
stir onion in bacon fat until tender. Add tomato, garlic, oregano,
salt and pepper; simmer uncovered 5 minutes. Stir in
beans; cook 15 minutes. Drizzle with lemon juice if desired
and garnish with bacon.
Servings: 4 large, 6 medium

Dirty Rice
1 box UNCLE BEN'S long grained brown rice
1/2 lb. sausage
1 small jar pimentos
Fry sausage in skillet; drain. Prepare rice according to package
instructions, adding jar of pimentos. When rice has finished
cooking, mix in sausage and serve.
