Stir Fried Broccoli
2 tbsp. peanut oil
3 tbsp. chopped onion
1 lb. fresh broccoli (stems sliced thinly, separated from buds)
1 tbsp. cornstarch
2 tbsp. water
1/2 cup chicken broth
1 - 2 tbsp. soy sauce or light soy sauce
1/8 tsp, salt
dash of pepper
pinch of sugar (optional)
Stir-fry onion in oil until tender. Add broccoli stems, stir-fry 2
minutes. Add buds, stir-fry 2 minutes. Dissolve cornstarch in
water, add to broccoli along with broth. Stir in soy sauce, sugar,
salt and pepper. Cook just until crisp tender.
Servings: 4 large, 6 medium

Green Beans And Corn
1/2 gallon green beans
1 tbsp. cooking oil
1 tsp. salt
water
2 cups corn
Put about a pint of water in pan and bring to boil. Add salt, oil
and beans. Cook about 2 1/2 hours. Add com and cook 20 to 25
minutes longer. Add water as needed during cooking time, but
cook until dry.
Servings: 10 - 12
