Pimento Cheese
12 oz. medium cheddar cheese
16 oz. VELVEETA cheese
4 oz. jar pimentos (diced)
2/3 cup mayonnaise
pepper to taste
Grate cheese, add pimentos and mayonnaise. Mix thoroughly.
If mixture seems stiff, add more mayonnaise to
make it spread easily. Makes approximately 1 quart.

Mary's Cheese Ball
2 (8 oz.) packages cream cheese, diced
1/4 cup creamy Italian salad dressing
1 packaged dried chipped beef
1 cup chopped pecans
When cream cheese is at room temperature, blend it with
salad dressing. Add the diced chipped beef. Mix thoroughly
and form into ball. Roll in the pecans to coat.
Refrigerate.
