Grape Juice
1 cup grapes
1 cup sugar
boiling water
Put grapes in half gallon jar. Dissolve sugar in some of the boiling
water and pour over grapes. Finish filling jar with boiling
water and seal. Process in hot water bath 10 minutes.

Pickled Beets
4 quarts beets
3 cups vinegar
2 1/2 cup sugar
2 cups water
2 tsp. whole allspice
1 stick cinnamon
1/2 tsp. whole cloves
1 tsp. salt
Cook beets until tender; cut as desired or if very small, leave
whole. Tie spices in cheese cloth. Put vinegar, spices, sugar,
water and salt in stainless steel kettle, Bring to boil; drop beets
in and bring to boil. Leave beets in until hot. Put in jars and
cover with the hot vinegar and seal. (I put jars in hot water
bath and simmer for 10 - 15 minutes.)
Makes 8 pints.
