Chow Chow
1/2 dozen onions
2 dozen'sweet peppers, some red
1 gallon chopped cabbage
2 quarts green tomatoes
1/2 cup salt
5 cups sugar
2 quarts vinegar
2 tbsp. mustard seed
1 tsp. turmeric
Chop onions and sweet peppers fine. Chop all vegetables. Put salt in to let stand several hours or over night. Drain well. Combine sugar, spices and vinegar. Bring to a boil and simmer for 20 minutes. Pack in sterile jars and seal.
Makes approximately 16 pints.

Pepper Relish
12 red sweet peppers
12 green sweet peppers
2 red hot peppers
1 1/2 dozen medium onions
2 tbsp. salt
2 cup sugar
3 cups vinegar
Grind peppers and onions with food chopper. Pour boiling water over mixture and let stand 10 minutes. Drain thoroughly. Add vinegar, salt and sugar. Boil 15 minutes. Put in jars and seal while hot.
