Coconut - Pineapple Pie
3 eggs
1 1/2 cups sugar
2 tsp. flour
1/2 stick soft margarine
2 cups coconut
1 small can crushed pineapple
1 tsp. vanilla
Combine eggs, sugar, and margarine. Beat until smooth. Add coconut, pineapple and vanilla. Stir and pour into two 8" unbaked pie shells. Bake at 350 degrees for 30 minutes or until firm in middle and golden brown on top.

Chess Pie
1 cup butter or margarine
3 cups sugar
6 eggs
2 tbsp. vinegar
pinch of salt
1 tbsp. vanilla
Cream butter and sugar; add eggs one at a time, beating well after each. Bake 10 minutes at 350 degrees, then 35 minutes at 300 degrees. I use this same recipe and add 1 cup pecans, or I cup coconut for pecan and coconut pies.
Servings: 2 or 3 pies in frozen cru st
