Raw Apple Cake
1 1/2 cups WESSON oil
2 cups diced apples
3 cups self rising flour, sifted once
2 tsp. cinnamon
1 tsp. vanilla
4 eggs
2 cups sugar
chopped pecans
Beat eggs lightly. Add sugar and WESSON oil. Mix thoroughly. Add vanilla and cinnamon. Continue to beat. Add flour and mix well. Add apples and pecans. Bake at 350 degrees for 1 hour and 15minutes on rack next to the bottom of oven. Do not open oven for the first hour and 10 minutes. Place sugar glaze on top.
Sugar Glaze
1 stick PARKAY margarine
1 cup packed brown sugar
1 tsp. vanilla
4 tbsp. milk (CARNATION evaporated)
Cook together until boiling; stirring constantly. Let cool; pour over cake.
