Carrot Cake
2 cups of sugar .
3 eggs
1 1/2 cups of cooking oil
3 cups of flour
1 tsp. baking powder
1 tsp. soda
1 tsp. vanilla
1 tsp. salt
2 tsp. cinnamon
1 cup of carrots
1 cup of nuts
1 small can pineapple (1 3/4 cup)
Bake at 350 degress for 1 hour in tube pan.

Coconut Layer Cake
1 3/4 cup sifted cake flour
1 tsp. salt
2 1/2 tsp. baking powder
1 1/4 cup sugar
1 tsp. vanilla
1/2 cup MIX-EASY shortening
3/4 cup milk
2 eggs
Sift together flour, salt, sugar and baking powder. Beat 2 minutes.
Add 1/4 cup cup milk, 2 eggs and vanilla. Beat 2 minutes
more and pour into two cake pans. Bake at 350 degrees for 30
to 35 minutes. Cool and frost with 7 minute frosting, spreading
fresh coconut between layers and on top.
