Stuffed Potatoes
4 medium baked potatoes
1/2 cup shredded cheddar cheese
1/3 cup milk
1 egg
2 tbsp. butter
1/2 tsp. salt
1/4 tsp. pepper
paprika
Half potatoes and scoop potato out. Mix potatoes and above
ingredients at medium speed with mixer until smooth. Bake
on high for 5 - 6 minutes after filling potato shells with mixture.
Garnish with paprika.

Portuguese Potatoes
8 to 10 Irish potatoes (cubed or boiled in jacket)
1 lb. VELVEETA cheese
1/2 cup chopped onion
1 small jar pimentos
2 slices bread, cubed
2 tsp. parsley
1 tsp. paprika
1 tsp. garlic salt
1 stick margarine
Cook potatoes. Place in large casserole dish. Sprinkle cubed
cheese over potatoes, then onion, pimentoes, parsley, paprika,
and garlic salt. Cube bread slices over tops of casserole. Melt
margarine and pour over casserole. Bake at 350 degrees 15
minutes.
