Bayou Red Beans And Rice
1 lb. dried red kidney beans (2 1/2 cups)
4 cups water
1 ham bone - 1 cup chopped ham
1 large onion, chopped
2 stalks celery with leaves, chopped
2 tsp.hotpeppersauce
Soak beans overni ght in water. Pour into a large heavy pan or
dutch oven. Add remaining ingredients. Simmer beans with
ham bone 3 hours or until beans are tender. Remove ham bone,
cut off meat and add to beans. Add water when necessary during
cooking. Water should barely cover beans at end of cooking
time. Remove one cup beans, mash, return to pot until thickened.
Serve hot over rice.

Breakfast Casserole
1 lb. sausage
2 cans crescent dinner rolls
2 eggs (beaten)
1 cup shredded cheddar cheese
Roll out 1 can of rolls in a 9" x 13" pan. Brown sausa ge, drain
and spread over rolls. Pour beaten eggs over sausage, then add
cheese. Top with remaining can of crescent rolls. Bake at 350 375
degrees for 15 to 20 minutes.
