Applesauce Muffins
2 sticks margarine, softened
2 cups sugar
2 eggs
1 tsp. vanilla
4 cups flour
3 tsp. cinnamon
1 tsp. cloves
1 tsp. allspice
1 lb. can of applesauce
2 tsp. soda
Combine applesauce and soda; set aside. Cream margarine, sugar
and eggs; stir in vanilla. Add flour and spices. Stir in applesaucesoda
mixture. Tum into greased muffin tins. Bake 20 minutes at
400 degrees. This mixture may be stored in the refrigerator for 2
or 3 weeks before baking.

Raisin Bran Muffins
15 oz. box raisin bran
5 cups plain flour
3 cups sugar
5 tsp. soda
2 tsp. salt
1 cup oil
4 beaten eggs
1 quart buttermilk
Combine raisin bran, flour, sugar, soda and salt. Add oil, eggs and
buttermilk. Store in the refrigerator in a closed container. Don't
restir mixture. Will keep up to 6 weeks. Bake in muffin tins at
350 degrees for 15 - 20 minutes.
