WSJS Hamburgers
5 lbs. ground beef
1 cup applesauce
2 cups RITZ cracker crumbs
5 tbsp. Worcestershire sauce
3 tbsp. TEXAS PETE
1/2 tsp. garlic powder
1 package LIPTON onion soup mix
In large bowl, mix all ingredients together. Make into patties.
Can befrozen.

ROAST BEEF
beef for roasting
1/2 tsp. salt per lb.
1/3 tsp. pepper
flour for dredging
Wipe beef with cold damp cloth; sprinkle with salt, pepper and flour. Place in roasting pan with fat side up, or with pieces of fat on top. Place in oven, keeping oven temperature at 500 degrees for 10 to 20 minutes; then reduce temperature to 300 degrees and cook, basting occasionally allowing 16 to 18 minutes per pound for rare meat; 22 to 25 minutes for medium; 30 minutes for well-done. Allow 1/2 pound for serving. Skim excess fat off pan drippings. Add 2 tablespoons flour, mixed to a smooth paste with an equal quantity of cold water, for each cup of liquid remaining. Blend well and bring to a boil for gravey.
