Coq Au Vin
1 (3 1/2 lb.) chicken
2 tbsp. butter
8 small onions
4 slices of bacon, diced
(may substitue carrots for bacon)
11/4 cup red wine
salt and pepper
1 bay leaf
2 cloves garlic, crushed
4 oz. mushrooms
3 tbsp. all-purpose flour
Cut chicken in serving pieces. Melt 2 tbsp. butter and fry chicken until golden brown, then remove and drain. Fry onions and bacon in butter until golden. Add flour and cook, stirring 2-3 minutes. Put chicken back in pan. Add wine, broth, salt, pepper, bay leaf, garlic, and mushrooms. Bring to boil, cover and simmer 35 - 45 minutes or until chicken is done.

Party Chicken
1 small jar dried beef
6 whole chicken breasts
5 slices bacon
1 can cream of mushroom soup
1 cup sour cream
In 2-quart greased baking dish, place dried beef. Wrap each chicken breast with bacon. Place on dried beef. Combine soup and sour cream; pour over chicken breast. Bake at 350 degre es for 1 1/2 hours. Serve with rice.
